  • New Zealand Mussels

    Add the mussels to the pan and cover. Cook for about 5 minutes until they're all open, stirring occasionally. Remove the mussels from their shells and set aside in a bowl. Discard any unopened shells. Now it's time to make some rice! Put the water on to boil while you peel and chop your garlic, parsley, and lemon wedges. It should start boiling shortly so put some salt in the water and add the rice. Reduce heat to medium low, cover, and cook for 15-20 minutes or until done. Place 2 tablespoons of olive oil into a skillet over low heat while you scrape off all that tasty brown gunk (that's called flavor). Add chopped garlic and sauté for no New Zealand Mussels (you don't want brown garlic!).Add the butter and stir until melted. Stir in the white wine (or vermouth) and simmer for 5 minutes to reduce slightly. Add all of the mussels to the skillet, sprinkle them with sea salt, pepper, and chopped parsley leaves. Cook for another 2-3 minutes or until the sauce is reduced by half. Serve over your perfectly cooked rice! Mmm… delicious! Enjoy!

    Rich In Iodine Iodine is needed by the thyroid gland for normal organ development and metabolic processes within the body . Although an important nutrient, too much of it can be damaging to the thyroid. However, since mussels are very rich in iodine, they help prevent hypothyroidism and other ailments that may occur from lack of iodine intake. The recommended daily intake (RDI) for adults is 150 mcg/day, which you can get from eating about two dozen raw mussels.
